Spicy Shrimp and Cauliflower Rice Stirfry
This recipe is inspired by one of my favorite dishes at Snappy Salads. It’s quick and easy to make, portion out for the week, and reheats well. 1 tbsp coconut oil 1 red bell pepper chopped 1 medium onion chopped 1 zucchini diced 1 yellow squash diced 1 tbsp minced garlic 20 raw shrimp (I use frozen) 1 cup riced cauliflower (I use Costco frozen proportioned) For the sauce: 1 tbsp minced ginger 2 tbsp Sriracha (more or less depending on spice level) 1 tbsp sesame oil 1 tbsp coconut aminos or soy sauce 1 tbsp rice vinegar Heat a skillet with coconut oil.
